THE HASHTAG GAME
After the doors have opened and the guests have settled down in their respective seats, the hashtag game was announced wherein the guests were invited to take a photo of me and post it in their Instagram accounts with the hashtag: #EiffelforDesireeat18, and the person with best photo, chosen by the photographer of course, will win a special prize! Yay! While the program was ongoing, Eventstagram was used to flash the submitted photos on the projector.
The entrance is a very grand and ‘this is my time to shine’ moment for any debutante. The spotlight is on you, everyone is looking at you as the music plays, and it’s a defining moment that yes, you’re finally 18 and the people dear to you are welcoming you to that world 🙂
Everyone thought I was going to enter through the ballroom doors, but nope! Turn your heads towards the stage and there I was, concealed by the LED doors!
With the sounds of the guitar in Mark Ronson’s Uptown Funk blasting through the speakers, the LED door slowly opened and smoke started coming out, revealing my slightly nervous yet pumped up with adrenaline self clad in a 2NE1-inspired outfit. Shining shimmering splendid! ~
Me and the backup dancers start making our way to the LED dance floor and right on cue, we snap our fingers to the beat and opened the party! ~

I ended my performance with being lifted up by the backup dancers and pointing in front. Fun fact: I’m kinda afraid of heights. My knees were wobbling during dance rehearsals, and we only tried the lift for about three to four times, but I didn’t want the fear to ruin the performance, so I gulped it down towards the very end of my being lol. This was THE performance of my 18 years of existence, there’s certainly no room for fear! THANK GOD I PULLED IT OFF.

High Impact was in charge of the lights and sounds, and they smoothly manoeuvred and timed them with the choreography.
After my opening number, lights were dimmed and my Pre-debut AVP and Growing Up AVP were played while I stealthily (like a ninja!) rushed outside the ballroom to change into my main gown. The painted door on the stage is actually a real functioning door where I exit towards the backstage 😀
We wanted to show the people who have a been a part of my life and have watched me grow, how I transitioned from this little child who used to play luto-lutuan in their store and perform traditional Chinese dances in her school, to the lady that I am now today. I wanted them to feel that they played a part in every step of the way.
Once the AVPs have finished playing, I was already positioned in front of the ballroom doors (and was doing a little twirling lol), and part of the COTE team who assisted me were saying in their radio earpieces “the debutante is ready, the debutante is ready”. CAN I JUST SAY THAT I FELT LIKE MIA FROM THE PRINCESS DIARIES.
Ok, so as you read this, please play in your head (or even on your laptops or phones if you want hehe) the song Love Me Like You Do by Ellie Goulding. I knowww, it’s from Fifty Shades of Grey, but if you disregard this info, it’s actually a very beautiful song!~
So RJ Ledesma says “Everyone, please stand up and turn your heads towards the ballroom doors as we welcome our debutante!” and 3rd Avenue, the absolutely brilliant band in charge of the tunes for that night, started belting the lines (please start with this part in your head, laptop, or phone):

Everyone dear to me was clapping and sporting happy faces and I could see the twinkle in my family’s eyes and how proud they are of me.
I remember my best friend Reena telling me, “You know, when you came out of that door, I got goosebumps all over, it was a very proud moment for me and I wanted to say ‘that’s my best friend, that’s my best friend’ ”
It’s honestly one of the happiest moments of my life, and I will never forget it.
THE FATHER & DAUGHTER DANCE
After my official grand entrance (haha), I proceeded to the end of the LED Dance Floor while my father was waiting at the other end, and 3rd Avenue started singing Michael Buble’s The Way You Look Tonight.
Ever since my mother and I have watched the dancing scene in ‘The President’s Daughter’, it has always been our dream that I dance to Michael Buble’s ‘The Way You Look Tonight’ with my father. We vowed to ourselves that it was definitely gonna happen in my debut, and it did! Daddy was so game with rehearsing and he even videotaped our practice so he can watch it in Bicol because he only got to practice twice due to being busy with work.
He asked for my hand, I took it, then I kissed his cheek, we waltzed and turned, he kissed my cheeks during the ‘and your cheeks so soft’ part, I did my last twirl and we bowed to the audience.
Dancing with my father is one of the best feelings in this world, and I am so so blessed to have been able to do it in a momentous day of my life. There I was, in my father’s arms, swaying to the most perfect song ever. Everything was perfect.
It will forever be etched in my mind, the way my father looked at me that night.
Immediately after the father and daughter dance came the dances with my dashing 18 messieurs!

THE FOOD AND DESSERTS
Of course, it wouldn’t be a Dining with Des post without THE FOOD haha! We had a food tasting weeks prior to the event, and I was really happy with the dishes since they tasted like Mediterranean food, which is very fitting for a European-themed debut! 😀
For the Salad and Appetizer, the hotel served Grilled Eggplant Salad Kaffir Lime Beef, Glass Noodle Salad with Seafood, Cucumber and Dill in Yogurt Dressing,Papaya Salad with Dried Shrimps, and Assorted Sushi and Norimaki Roll served with Japanese Wasabi, Soy Sauce and Ginger Pickle.
The guests were also served Mushroom Cream Soup with Truffle Oil (my fave!) along with fresh assorted bread rolls and butter.
As for the mains, choices include: Yakitori Style Salmon with Leek Fondue, Chicken Breast with Sesame Seeds and Coriander Mild Chili Sauce, Lasagna, Braised Tofu with Seafood, Squid Stuff Coconut Flavor Fish Mousse and Tamarind Cream Sauce, Slow Cooked Braised Lamb with Garlic and Celery (my fave!), Tandoori Fish with Coriander-Yogurt Sauce, and Beef Stroganoff.
And last but definitely not the least, THE DESSERTS!~ We thought it would be nice if we positioned the dessert buffet around the Eiffel Tower, and this arrangement was made possible by P2 Details! ❤ There was Warm Apple Crumble, Baked Cheese Cake with Berry Compote, Individual Chocolate Mousse Served in a Cup, Assorted French Pastries such as French Macarons and Eclairs (in pastel colors, which I requested teehee~), Mango Pudding, Fresh Sliced Fruits with Fruit Coulis, Mini Cupcakes, Ferreros stuffed in bouquets, Meringues, and more!
Meanwhile, my brother offered the guests some wine and Hennessy V.S.O.P to go with their food.
I’ve gotten good feedback about the food and the ‘unlimited’ desserts daw haha, and I’m so happy because I loved everything as well! Yay! Perhaps I can assume that you’ve given the food and the desserts 5 Des Points? I hope so! ❤
While the guests were eating, I stealthily went out of the ballroom again to take pictures on the staircase and here they are! 😀
After dinner time with the soft and mellow tunes sung by the band such as my all time favorite Sunday Morning by Maroon 5, messages were given to me by my darling 18 mesdemoiselles! ❤

Remember when we were all saddened when we heard that the locks on the Pont des Arts would be taken down? I wanted to uphold this tradition and so instead of using candles, we decided to use love locks! 😀 These love locks ‘lock’ the messages given by my mesdesmoiselles for a friendship forever (we can prove that there’s forever ok lol), and I have the ‘key’ to our friendship. So what I do after they give their messages is that I open their locks with their respective keys and they, in turn, secure these locks in a mini Pont des Arts made by Larry <3. It was such a nice moment, it’s like I formed an infinite bond with my girlies~

Shortly afterwards, the guests were asked to play a placard game with multiple-choice questions about me. It’s a table-by-table elimination game and the last remaining table gets to be the winner of Starbucks Cards worth P1000.00! 😀
We didn’t want my party to be all about me me me just because it’s my party. As what I’ve said before, I don’t want the guests to just eat. Of course, in a party, not only must the celebrant enjoy, but the guests as well. We wanted the guests to be entertained so as to not waste the time and effort they exerted just to make it to my debut.
Questions such as when did I start liking Kpop (2009), what’s my favorite condiment (soy sauce) and least favorite subject (physical education 😦 ) were asked, and dun dun dun here are the winners!
After the placard game, an AVP video was played containing the messages of my 18 tresors, who are our dear family friends. I was touched by their messages and pieces of advice. I’ll certainly keep them in mind and use them to guide me in the world of adulthood!
INTRODUCTION OF THE FAMILY
My family was introduced right after the AVP video ended. They came out of the LED doors one by one like guests on a talk show lol! My parents dedicated their own speeches, to me, with my dad using his to propose a toast, and I was immensely touched by their words. I felt like their very own special little girl and got a little teary-eyed along the way. I’ve even memorized some parts of their speech haha! There’s really nothing that can ever compare to the fond manner that your parents exude when speaking to you, and how each word is laced with proudness and love ❤ I love that no matter how busy they can get, when it comes to my brother and I, there’s no room for second thoughts, my parents will always go out of their way for us.

BLOWING OF THE BIRTHDAY CAKE AND THANK YOU SPEECH
I really really really really (like the song? Haha) love my birthday cake! Penk Ching is really amazing! In our first meeting, we were able to decide on the cake flavor and design immediately! The placing of the candles was really nice as well!
Mom and Dad lighted up the candles and my lovely guests all sang ‘Happy Birthday’ to me, and I blew all 18 candles! We really wanted 18 candles, not just the numbers ‘1’ and ‘8’ hehe!
Then, I proceeded to give my Thank You speech, which was 3 pages long! I’m not known for being wordy for nothing! I really tried to shorten it, but I couldn’t because I wanted to thank each and everyone present and responsible for the success of the event. I really prepared it talaga so I hope the guests didn’t go into zzz mode hehehe~
We exited the birthday cake area, and the Same Day Edit video was played on the screens.

No, this was not yet the end of the program. The party shall continue, and this time, with a game called The Singing Bee!
I think everyone knows how the Singing Bee game works. The band will sing a song and pause, and the players have to continue singing the next lines with the correct lyrics. My gosh, they were so game, and they hit the high notes! I was laughing my heart out backstage! Thank you so much to those who participated, you guys made it so fun!!! Participants got H&M Gift Cards worth P1000.00 and those who went into todo na talaga mode got additional Starbucks cards! ~
Songs that I loved as I was growing up were played such as Awitin Mo at Isasayaw Ko by VST and Company (this was quite a hit with mom and dad’s friends!), As Long As You Love Me by Backstreet Boys (MY CHILDHOOD!), Payphone by Maroon 5, Crazy For You by Madonna (my fave karaoke song) and my all time favorite shower song: Chandelier by Sia (WATCHING THIS BEING SUNG BY MY BLOCKMATE KURT CRACKED ME UP SO MUCH BACKSTAGE!) Not to mention, 3rd Avenue was so great! Their renditions were amazing!

After the Singing Bee, the winner of the hashtag game was announced, and it was my close friend Klinton who won! He happened to catch me when I was posing at the staircase and he was able to capture that exact moment. Guess I’m not so clandestine after all.

Why was I backstage? Little did the guests know, I was changing into my Beyonce-inspired finale costume while my brother, Kurt, and Limuel were changing into their EXO-inspired ones. If there’s an opening number, then there should definitely be a finale!
All of the performances were top secret. No one knew I was gonna dance. Not even my best friends Reena and Tricia knew. I really had to keep myself in check so that I don’t squeal anything to my friends and ruin the surprise! My brother’s friends were also unaware that there was going to be a performance and was shocked when Limuel and Kurt suddenly appeared on the dance floor because moments ago, they were just sitting with them haha! Surprise, surprise!
It has always been my dream to perform a K-pop song with my brother and friends! Kurt and I have always planned to perform together ever since we were in high school and this time, we finally made it happen! Ahia Limuel was also the perfect since he does covers of K-pop dances in conventions and is one of my closest guy friends!
We got Reigh Sy to choreograph our performances. He’s so fun to work with, he’s versatile, and he easily adapted to K-pop grooves! I bet he can sing EXO’s songs now! I didn’t want to do cutesy moves, those where you just sway left and right and point to your backup dancers, so I really told Ahia Reigh I wanted to do cool dance moves and showed him EXO videos!
I really wanted my debut to be centered on my family as well, and so I wanted all of them to be a part of the finale. THIS SPELLED PRODUCTION NUMBER! I envisioned the lineup to be me and my brother first, then our friends will join us, followed by my mother’s number, and our family dance. YES. I GOT MY PARENTS TO DANCE!
Ahia Reigh told me that for my dance with my brother, it has to be a slow one first, so I suggested Don’t You Worry Child by Swedish House Mafia because when I first heard this song, I thought it’d be good for a contemporary dance performance and the lyrics really spoke to me. We both liked it immediately so a decision was made 😀
For this performance, we wanted to portray a so close but so far away feeling, like you want to reach, but you can’t. However, in the end, you can see that the protagonists have found each other.
After the Ong siblings dance number, we stayed in our positions and BOOM, EXO’s Dubstep Intro starts playing, and Kurt, Limuel, Ahia Reigh and his crew joins us on the dance floor, and the surprise was so worth it because my fellow EXO fan/best friend Tricia literally screamed like a fangirl when the song started playing and I could see the shock in my friends’ faces. My mom was laughing so much because Tricia looked like she was having a heart attack. Tricia told me she thought there was going to be no K-pop dance. See, that’s what I wanted everyone to think! 😉

The next song that played was the stage version of the song that propelled EXO to the top: Growl. The highlight of this performance is definitely the dance battle wherein the group split into two. That’s why, during the start of the song, I switched positions with my brother.
IT’S ABOUT TO GO DOWN
After the chorus, there was a dance break, and then we went out of the dance floor to make way for my brother Dustin and Kurt’s team, and the backup dancers. When their part was over, my brother pointed at me as if to challenge me, and my team, which consisted of Limuel, Ahia Reigh, and I, were like shoo go away! You ain’t got nothing on us! It’s our time! One, two, three, four, and we bust our moves!
After our K-pop performance, my brother and I immediately went backstage to change into our formal wear while Ahia Reigh and his crew strutted our their sassy moves to Beyoncé’s Yonce.
Then, it was time for my mother’s solo dance number of her favorite song Sugar by Maroon 5!
And finally, the family dance! I could see the guest’s surprised faces when daddy suddenly went to the dance floor! We all danced to Love Never Felt So Good by Michael Jackson, and in the end did a family pose haha!~

When it all comes down to the big day, my advice is to throw away all your worries and just enjoy. It’s your day! Get a good coordinator because trust me, they can do all the wonders. You don’t have to worry about anything on the day itself. Don’t become a debut-zilla! It’s nice to work with suppliers when you get along with all of them, and some even become your good friends! 🙂 Trust your suppliers, they definitely know what they’re doing.
aaaand THAT’S A WRAP!
What a night! I’ll never ever forget this day and will always look back on one of the happiest moments of my life.
